Our olive Mill is the heart of our brand-where tradition meets innovation. Located near centuries-old groves, the Mill is designed to preserve the natural integrity of each olive from harvest to bottle. Our Mill combines time-honored Mediterranean techniques with modern cold-extraction technology. From carefully selected olives to precision milling, every step is designed to protect aroma, flavor, and polyphenol richness-resulting in an extra virgin olive oil of exceptional purity and character.

State-of-the-art equipment

Our production line combines modern stainless-steel machinery with a carefully controlled process to obtain pure olive juice, exclusively by mechanical means and with no shortcuts.

  • Washing & sorting units to clean and select the best olives.

  • Temperature-controlled malaxers to develop the oil’s aromatic profile.

  • Two-phase continuous decanters for mechanical separation of oil, water and solids.

  • Optional polishing and filtration systems for filtered or unfiltered styles.

Cold extraction

We are committed to genuine cold extraction. The paste temperature is kept below 27°C throughout the process, helping to protect delicate aromas, maintain low acidity, and preserve natural polyphenols and antioxidants.

Traceability
